This avocado toast will 'guac' your world ...


Fast, colourful & so so so tasty ... avo toast is a healthy go to brekky for us, so I am always changing it up a little. I hope you love this version as much as we did.


Avocado, tomato & Olive toast (serves 2)


1 avocado ripe & ready to eat

2 tbsp vegan parmesan* or plain nutritional yeast

10 cherry tomatoes (cut in half)

8-10 olives (whatever your favourites are)

A few sprigs each of dill & coriander (any herbs you love will work, basil, chives, oregano)

2 slices of sourdough

A few tbsp hommus (I use storebought Yumis' brand is my fave)

a sqeeze of lemon juice and salt and pepper to your taste


Cut the tomatoes in half & pop them in a bowl with the roughly chopped coriander and dill. Throw in the olives, drizzle with a little olive oil (or whatever your go to is... avocado oil would be yum, too) a squeeze of lemon juice and season to taste with salt and pepper. Split the avocado, deseed & scoop into a bowl with the vegan parmesan* or nutritional yeast, a squeeze of lemon juice, salt & pepper. I also added a teaspoon of crush chilli flakes here (we love it spicy!)Scoop onto your favourite toast top with tomato salad and put a dollop of hommus on top ... told you it would guac your world... enjoy!

Vegan Parmesan


1 cup raw cashew nuts

2 tbsp nutritional yeast

1 tsp salt

1/2 tsp pepper

1.5 tsp onion powder

1.5 tsp garlic powder

Blitz in high speed blender until it is as fine or chunky as you like
