My little cupcake

The 9 year old is boooored. What can we doooooo? Cupcakes? Yaaayyy!!!

These are super easy and really yummy & I used all the wholefood options I could!

Vanilla Coconut Cupcakes


(Makes 12)Cupcakes:1 cup coconut milk (or any plant based milk you prefer) + 1 tsp apple cider vinegar1/2 cup coconut oil1 cup rapadura sugar1 tbsp vanilla paste or essence1 cup spelt flour1/2 cup coconut flour1 1/2 tsp baking powder1/2 tsp bi-carb soda1/4 tsp saltFrosting:1/2 cup coconut oil3 cups icing sugar1 tsp vanilla paste or extractenough plantbased milk to gain the desired consistency.

Preheat the oven on fan forced to 170 C and line your muffin tray with 12 papers. ( i used the standard size).Pour the milk and vinegar into a bowl and allow it to curdle.Place the room temperature coconut oil in a bowl with the rapadura sugar and cream until light & fluffy.Slowly beat in the curdled milk & vanillla.Sift dry ingredients into a bowl and fold into the wet ingredients.Scoop into the lined muffin tin & bake for about 25 minutes or until the cakes spring bake to the touch.They will be golden in colour but only around the edges. (depending on your oven).

Add firm coconut oil, icing sugar & vanilla to a bowl and whip til smooth & creamy. Add milk to soften if you need to. If you want to pipe the icing like i have I suggest making a double batch. I divided the icing into 3 & added the colour. I put a spoonful of each colour into the piping bag for the swirly effect.

Have fun! The 9 year old said the time flew by while we were baking and decorating! Thats a great sign!! She was totally engaged. Not one "I'm bored" for about an hour & a half!! Totally worth the effort :)
