lentil as anything about this soup!

My love is not feeling well. What can I do? Charge him up with turmeric, ginger, garlic & chilli! This soup heals the soul & if the soul is taken care of...well, it's just a matter of time.

Turmeric, Pumpkin & Lentil Soup

(serves four)

2 tbsp coconut oil

1 tbsp mustard seeds

2 tsp cumin seeds

1 cinnamon stick

2 dried red chilli's

3 garlic cloves chopped

2.5 cm piece of ginger chopped

1 brown onion sliced

1/4 jap pumpkin, peeled & chopped into chunks

15-20 cherry tomatoes

1 cup red lentils

1 tbsp ground turmeric

Salt to taste

Saute the spices in the coconut oil til they start to pop, add the onions, garlic ginger and chilli and stir over high heat for a few minutes. There is no need to be delicate with this soup. Get some heat and colour into it. Add the tomatoes, pumpkin, turmeric & red lentils and pour over enough boiling water (from the kettle) to just cover the veggies. Season with sea salt & let it simmer rapidly for about 20 minutes, until the pumpkin & lentils are soft. Top with some coconut yoghurt, chopped coriander & some cashew nuts.
