I’m nuts about this Macadamia feta ...

I soaked these macadamias in filtered water overnight in a warm spot. They activated and started to culture which brings the cheesiest most delicious complex flavors. You don’t have to do this step but it’s really satisfying to wait for nature to have her hand in the process. Next time I’m going to add acidophilus cultures to really take it next level! For now try this version 💖

Macadamia feta

500g. Macadamia nuts soaked overnight

3 tbsp. Miso paste

3 tbsp. Nutritional yeast

2tbsp. Onion Powder

1 tbsp. Garlic powder

1 pinch. Himalayan salt

2 tbsp Apple cider vinegar

Blend until creamy In a high speed blender. You may need to add a little water to keep things moving.

Spinach and macadamia nut feta Dip

2. Big handfuls of spinach washed

1 cup. Basil leaves

1/2 cup Mint leaves

Throw the washed spinach and herbs into the blender with the cheeze & blend. Adjust the seasoning to your taste with a little extra salt. Serve with crackers and fresh vegetables or spread on sourdough. You could toss it through some pasta or in a baked potato. Or wrap it up in filo or puff pastry and make a spinach and feta roll or parcel. #yumstuff
