I am bananas about this bread!


Banana Bread with Tahini Caramel

Bread:

1/2 cup Coconut Oil

2 cups Whole spelt flour

2 tbsp. Ground flaxseed

3/4 cup Maple syrup

1 tsp Baking soda

1/4 tsp Sea salt

1/3 cup Orange juice

1 1/3 cup Mashed overripe bananas

1 tsp Vanilla essence

Tahini Caramel:

10 Dried dates (soaked in boiling water)

2 tbsp. Tahini

1 tbsp. Maple syrup

1 pinch Sea salt


Method:

Line a loaf tin with baking paper & preheat oven to 175*c


Combine bananas, orange juice, vanilla & maple syrup in a bowl.

Combine all dry ingredients in another bowl and fold wet ingredients into the dry.

Pour cake mix into loaf tin and bake at 175*c for about 45 minutes.


Tahini Caramel

Soak dates in boiling water and drain when soft. Blitz all ingredients in a high speed blender til smooth.


I sprinkle pecans & oats over the top for a beautifully tasty & crisp finish. Use any nuts or seeds that you love!
