Cucumber Kim Chi


450g Lebanese cucumbers

2 tbsp sugar (whatever kind you have raw, caster, brown or use maple if you're sugar free)

1.5 tsp salt

1.5 tbsp chilli flakes

1 x 5cm piece of ginger peeled and thinly sliced (use a tbsp of minced if that's what you have)

4 garlic cloves peeled and thinly sliced (use a tbsp of minced if you can't be bothered!)

3 tbsp of Braggs soy protein

3 tbsp of light soy

1 tbsp nutrional yeast

1 small carrot cut into matchsticks


1 spring onion cut into 5cm matchsticks. Toss the vegetables in the sugar, salt, chilli ginger & garlic and allow to sit for 15 minutes. Add the soy protein, soy & nutritional yeast, pack and store. you can use them straight away (delicious) or leave for a few days for them to get a bit funky. (even more delicious!)
