Classic Chickpea Hommus

It was brought to my attention today that my favorite hommus brand is full of preservatives and acidity regulator (may be chemical or organic, not specified!) I can't believe I never checked the ingredients, I check everything I buy. I've been buying this brand for years! So I am having a mild panic attack about finding another brand & then I remembered I am chef!!! I have a wonderful recipe and I've been doing you a disservice not sharing it with you. So, please make it, it takes 15 minutes if you use tinned chickpeas, its all organic, 5 ingredients, costs about $5 for 2 kg & it's simply delicious.


(Makes about 1.5 kg)

4 tins of cooked chickpeas

1.5 cups tahini paste

8 tbsp lemon juice (fresh is best)

6 big cloves garlic or 8 small

200ml iced water


Strain chickpeas, rinse and place in the food processor with the garlic. Blend to a thick paste. Add the tahini, lemon juice and about 2 tsp salt. Blend until smooth and drizzle in the iced water while the blender is going. The iced water make the hommus super light in colour and fluffy in texture, best trick ever! Taste and check for seasoning (I always need a little more salt).

Make your own variations, add some herbs (basil, YUM!) Roasted pumpkin or beetroot, spices, like cumin or smoked paprika. What ever takes you home.
