Super Easy ... These are ready in 20 minutes and they are lovely!! Dangerously moreish!
A lot of dark chocolate is vegan, usually anything over 70% will be dairy free.
Chocolate Oreo Truffles
1 packet or regular oreos
100g Vegan Chocolate (I used dark, but use whatever your fave is)
1 tbsp Boysenberry jam (any berry jam is fine, I just happened to make boysenberry the other day).
1 tbsp coconut yoghurt
Coconut for decoration
Put the chocolate in a glass bowl over some water in a saucepan and simmer gently to melt. Put the oreos, the jam and the coconut yoghurt into your food processor and blend til smooth. Use your tablespoon measure to scoop them onto a plate sprinkled with coconut then roll them into balls. Stir the chocolate well to ensure there are no lumps. Use a fork to dip and roll the oreo balls around til encased in chocolate. Pop them onto some baking paper and sprinkle with coconut, ground pistachios, freeze dried raspberries or whatever garnish you prefer allow them to set. Try to eat only one!!!
