Super easy to make and super delicious. I plan to dollop this chutney onto roasted sweet potatoes with hommus, macadamia fetta, walnuts & herbs for Christmas lunch, Can't wait!!!
The cherry relish was a hit!! Here is how to do it:
1kg cherries pitted
1 large red onion chopped into 1cm (ish) dice
1/3 cup apple cider or red/white wine vinegar
1/3 cup sultanas
1/4 brown sugar or maple syrup
1 cinnamon stick
1 star anise
1 dry red chilli
2 tsp pink salt
1 tsp cumin
Throw everything into a pot and bring up to the boil. Turn it down and let it simmer for about an hour or until its all thick and sticky and the flavours have developed and are balanced. It will be delicious with hommus, on sandwiches, or with a mushroom pate (ooohhhhh my goodness!!) Or with the sweet potatoes as described above. Enjoy!
