Celery Leaf, Kale & Walnut Pesto

Do you throw away your celery leaves? STOP! They make a kickass pesto. I am super particular about pesto after years in high end & Michelin star Italian restaurants and this one is nek level! Some might say sacrilegious as it is totally vegan, I say ”yumstuff”. Compassionate, less waste & delicious! Winning 👍


Ingredients

3 cups celery leaves

1 stalk kale

1 cup Basil

2 cloves garlic

100ml lemon juice

1/4 red onion

3/4 cup nutritional yeast

1/4 cup oil

1/4 cup walnuts raw

1 tsp himalayan pink salt

Method

Place onion, garlic and lemon juice in a high speed blender and blitz. Then add celery leaves, kale & basil, blitz. add salt, nutritional yeas, walnuts and oil & blitz again. Taste, adjust seasoning and Voila! Yumstuff is yours 😍
