Blueberry, coconut & macadamia dressing
This dressing will compliment All kinds of salads, crudités or make a great spread on a sandwich/baguette/bagel and the color is eye-popping! It’s probiotic, high in healthy fats and proteins and simply scrumptious 😋

Blueberry, coconut & macadamia nut dressing
1 cup Activated macadamia nuts
1 cup Dill
1 cup Mint
6 tbsp Tahini
1 cup Coconut Yoghurt
8 tbsp Maple syrup
1/4 cup Apple cider vinegar
1 cup Blueberries (fresh or frozen is fine)
Salt & Pepper to taste
Soak macadamia nuts overnight and strain. Place all ingredients in a high speed blender and purée til smooth. Taste and adjust the seasoning to your liking.
