Ain’t nuffin like these muffins ...

Jammed with nutrition, omega 3’s from the flaxseed, chia seeds and walnuts, protein and magnesium from the spelt flour, packed with fruit and carrots these are delicious & guilt free!

2 cups. Spelt Flour

1 tbsp. Baking powder

1 cup. Flaxseeds (ground)

1/2 cup. Rapadura sugar

1 tsp. Cinnamon ground

1.5 cups. Grated carrots

2. Chopped apples

1/2 cup. Roughly chopped dates

1 cup. Roughly chopped walnuts

3/4 cup Coconut milk

2 tbsp. Chia seeds Soaked in 6 tbsp water

2 tbsp. Coconut Milk

Soak the chia seeds in the filtered water and leave to activate (will take about 5 minutes). Grind the flaxseeds in a high speed blender and place in a bowl with flour, baking powder and cinnamon. Run a whisk through the dry ingredients to combine and sift out any lumps. Grate the carrots into a separate bowl, you can grate the apples too, but I like them diced. Roughly chop the walnuts and dates and add to the flour. Add milk and chia eggs to the carrots and apples stir And add to the dry mix. Bake at 160°c for 25 -35 minutes makes 12 regular sized muffins. Enjoy!! These are soooooo good!!
